Антанас Гульбинас получил степень доктора медицины в Медицинской академии Литовского университета для наук здравоохранения, Литва. За исследованиями последовали ординатура и лицензии абдоминального хирурга в Литве. С 1999 по 2003 год он был аспирантом Медицинской академии Литовского университета для наук здравоохранения. После этого в 2004 году Антанас Гульбинас защитил кандидатскую диссертацию «Факторы риска и прогнозирование осложнений, связанных с недостаточностью панкреатоеюнального анастомоза после панкреатодуоденэктомии”.

В 2002-2003 гг. он был назначен научным сотрудником в европейскую научно-исследовательскую лабораторию поджелудочной железы Гейдельбергского университета, Германия, где исследовал роль транскрипционного фактора GATA-3 в патогенезе рака поджелудочной железы. До поступления школу медицины Назарбаев Университета он работал хирургом, профессором и главным научным сотрудником в Медицинской академии Литовского университета для наук здравоохранения.  Антанас Гульбинас возглавлял научно-исследовательскую лабораторию хирургической гастроэнтерологии в Институте исследований пищеварения Литовского университета медицинских наук.

Основные направления научных исследований: диагностика, прогноз и патогенез воспалительных и новообразованных заболеваний поджелудочной железы. Последние проекты сосредоточены на роли мРНК стабилизирующих белков, ‘хитшоковый’ белок и других цитопротекторных молекул в патогенезе и течении рака поджелудочной железы. Исследования сочетают в себе как использование клинических данных, образцов тканей от пациентов, так и исследования в лабораторных условиях с клеточными линиями рака поджелудочной железы. Он представил методы выделения и культивирования клеток панкреатических звездчатых клеток человека в лаборатории хирургической гастроэнтерологии.

Антанас Гульбинас является членом Совета европейской хирургии пищеварения (EDS), членом Международной гепато-Панкреато-билиарной Ассоциации (IHPBA), Совета Литовской ассоциации хирургов и Исследовательского совета объединенной европейской гастроэнтерологии.
